Blogger Fail

Well, I made the tastiest teriyaki tofu and stir fry vegies with jasmine rice tonight but I can not share it with you because I totally spaced on taking a picture of it!!!!

 crap, crap, crap!!
And it had bok choy and bamboo in it!!! My first time cooking bok choy, I was excited. The marinated and breaded tofu was sweet/salty and delicious!!! And I am in love with jasmine rice. I limited myself to a quarter cup but oh I could have poured siracha on that and eaten just it!!!

I suck. I will try to improve. I swear my next craft project should be a big wooden sign I hang in my kitchen that says, "take a picture of it, ya goober!!"

New Menus!

My next two week menu plan is done. I am trying to eat a little lighter as summer approaches so in some meals I have a bread planned for the kids but I will be attempting to fore go it. Sometimes I may even accomplish that goal!

Day
1. Chili ginger soba noodles and stir fry broccoli, red pepper and carrot
2.Artichoke,mushroom,olive,garlic, onion, sundried tomatoe salad served on dark greens with bread sticks.

3.Cuban black beans and rice served with red wine vinegar and oil on top and plenty of onions! Side salad and baked plantains.

4.Tofurkey turkey slices and mashed potatoes in gravy, green beans with sour sauce, cranberry sauce, dinner rolls, side salad

5.Southwest salad with Buffalo chx (sub), seasoned black beans and corn tortillas
6.Stuffed green peppers, sub cous cous for rice with iceberg wedge with fresh ranch and peppercorns
7.Bean chili, marinated veggie salad
8.Veggie noodle soup/salad,dinner roll
9.Spinach enchiladas, crockpot beans and fresh pico de gallo
10.Taco salad with tofu taco meat and leftover crockpot beans
11.Indian Coconut Curry simmering Tofu with cauliflower, broccoli, zuccini, carrot and red pepper with jasmine rice and saag

12.Italain Eggplant Bake, Baby spinach salad with onions and olives
13.Teriyaki Tofu stirfry with leeks, bamboo, bok choy and brocolli with sticky rice and hot tea
14.TVP,mushroom, onion and garlic in brown gravy served over polenta and sauteed greens. Sliced radish and tomatoes in balsamic glaze
15.Ranch salad, greens, peas,onion,cheddar cheese, cucumber,bacon, tomatoes,green onion. Served with rollsand apple,grape celery salad and lemonaid
16. Tofurkey Ruebens and fries
17.Taco soup and chips
18. Lemon garlic pasta and spinach salad with cranberries and sunflower seeds

I went to the store and spent over a third of my budget in fresh vegies. I can't wait till our menu is full of vegies right out of our garden, especially the salads!!!

Happy St Patrick's Day!


Happy St Patrick's Day y'all!!!!

Here at the house on Clover Ridge we take St Patrick's Day as a chnce to celebrate with some delicious food!!! My favorite color is green and I love to blabber on so this holiday suits me like a bee to honey! So in the interest of Irish blessings here are a couple to make your heart warm like ya just gulped some nice Irish whiskey!


















I tried to make today special, I even wore my special St Paddy's Day Socks!



This morning for breakfast I gave the kids Leprechaun cereal (Lucky Charms) and green fruits. Green apple and kiwi. I made sure they were wearing green to avoid any pinching or punching, they are boys! And for dinner I decorated the table with little pots of gold (candy) and green depression glass plates.


I picked up some "wine" for the kids(sparkling green grape juice) and spread some chocolate coins around. I made delicious Rueben sandwiches with Tofurkey and soy provolone(swiss is hard to find here) tons of saurkraut and broiled onions and yummy special sauce! (bottled horseradish and Kroger brand sandwich spread which is like a thick thousand Island dressing with extra picles in it) French fries because potatoes remind us of the Irish potato famine.

And for dessert I made vanilla pudding with coconut milk and added peppermint extract, creme de menthe chips and green food coloring. Then I layered it in clear glasses with pudding on the bottom then crushed Oreos and whipped topping and more creme de menthe chips!! Decadent and delicious!!! And super cute with a little leprechaun perched on top!

Dining Room Hutch Redecorate

This is my dining room hutch. With the shelves and dishes removed obviously. I wanted to add mirrors to the back, I think. But since I wasn't entirely sure I decided to use a very shiny metallic paper to test it out. Clever right?????

I just taped it up and added the shelves back in to help hold it in place. Then I put the dishes back. I am considering adding lights somehow but for today I am content with this part. I figured I would see how this suits me for a bit and if I don't like it it is an easy enough fix! Just pull of this paper and try something else! The whole thing took me about 90 minutes including unloading and reloading the hutch with dishes! I LOVE fast projects!!!!

Lucky! Lucky! Lucky!!!





Shouting it from the roof tops!! I am one lucky girl!!!

I made this little cut paper project with paint chips I picked up at Lowes the other day. It took me 10 minutes or so to cut, lay out and glue the pieces and stick it in one of my favorite Ikea frames!  Now the kitchen is ready for St Patrick's Day!
